How to make Swedish Coconut Cookies

Ingredients:

  • 3 1/2 cups all-purpose flour
  • 2 cups sugar
  • 2 cups butter, softened
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla
  • 1 cup sweetened flaked coconut

Directions:

  •  Mix all ingredients except coconut in a large bowl.
  • Beat at a low speed until well mixed. Stir in coconut by hand.
  • Divide dough in half. Shape into 12×2-inch logs. Wrap in plastic wrap and refrigerate for 2 hours.
  • Heat oven to 350. Cut logs into 1/4-inch slices. Place on ungreased cookie sheets, about two inches apart.
  • Bake 10 to 14 minutes or until edges are lightly browned.
