Spinach and Mushroom Omelet

Sauteed spinach and mushrooms folded in soft, tender eggs for a fast, oh-so-satisfying breakfast you can fix in less than 20 minutes. This spinach and mushroom Omelet is a great option for a healthy meat-free breakfast.

Variations

  • Egg white spinach omelet: Use only egg whites and omit the egg yolks.
  • Seasoning: Fresh herbs and aromatics like thyme, basil, cilantro, parsley, chives, savory, green onion, leek, garlic
  • Basically, whatever you have on hand, you can put in an omelet. If you want meat, add cooked ham, bacon, chorizo, or even salmon.
  • Add some of your favorite vegetables. Kale, asparagus, tomato, leek, broccoli, and peppers are all great additions to this omelette. Use up whatever veggies you have in your fridge! Other options include sun-dried tomatoes, canned artichokes, deli olives (drained)
  • Cheeses like goat cheese, cheddar, feta, pepper jack, gouda, gruyere, brie, and parmesan.
  • Don’t be afraid to add any ingredients you think you will like!

How to make a Spinach and Mushroom Omelet

Ingredients

  • 2 tsp extra virgin olive oil
  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 4 cups spinach, stems removed if needed
  • 4 eggs, whisked
  • salt and pepper, to taste
  • 1 tsp dried oregano

Directions:

  1. In a non-stick pan, heat 1 tsp of olive oil on medium heat. Add mushroom and onions.
  2. Saute mushrooms and onions for 3 minutes then add spinach.
  3. Season with salt, pepper, and oregano.
  4. Once cooked to desired tenderness, remove the vegetables from the pan.
  5. Keep pan on medium heat. Add tsp of remaining olive oil and pour in whipped eggs. Sprinkle with a little more oregano, salt, and pepper.
  6. Top one side of omelet with cooked veggies. Fold omelet over with a spatula. Cook until eggs are done.

TIPS & VARIATIONS

  • SPECIAL EQUIPMENT: Use a well-seasoned 10-12 inch cast-iron skillet or other non-stick skillet
  • Eggs cook quickly, it is important to have all ingredients prepped before beginning cooking the eggs.
  • Add salt to the eggs 15 minutes before cooking.
  • All fresh ingredients like meat or vegetables should be cooked prior to adding.
