Roasted Almonds with Coriander, Chili, and Olive Oil

Ingredients

  • 1/2 tablespoon olive oil
  • 1 1/2 cups blanched almonds
  • 1 teaspoon coriander seeds, crushed
  • 1 to 3 small fried red chili peppers
  • 2 generous pinches of sea salt

Directions

  1. In a hot sauté pan, add olive oil and almonds until golden brown.
  2. Mix in other ingredients. Serve hot.

Sinful Stuffed Dates

Delicious dates stuffed with sweet, nutty flavors—sinful has never tasted so good.

IngredientsSinful Stuffed Dates

  • ½ cup chopped pecans
  • ¼ teaspoon ground cinnamon
  • ½ cup plus 2 tablespoons shredded, dried unsweetened coconut
  • 2 tablespoons maple syrup
  • 1 tablespoon virgin coconut oil, melted
  • 18 dates

Directions

  1. Preheat oven to 350 degrees.
  2. In a small bowl, combine orange zest, chopped pecans, cinnamon, 2 tablespoons coconut, syrup, and oil. Stir until evenly coated.
  3. Spread out on parchment-lined cookie sheet and roast 5 to 6 minutes until lightly browned. Remove from oven and set aside.
  4. Carefully slice each date down one side and remove pit. If necessary, make small cuts in rounded ends of dates so they do not tear. Gently turn date inside out, placing sticky side down on work surface.
  5. Press ¼ teaspoon roasted nut mixture into each date. Fold up edges and press seam and ends together to seal shut. Place remaining ½ cup coconut in small bowl, then press and roll sealed dates in coconut to coat.
  6. Arrange on tray and serve.

  • ¼ cup pecans
  • ¼ cup walnuts
  • ¼ cup pepitas
  • ⅔ cup dried cherries
  • ¼ cup dark chocolate chips

Option 2: Monster Mix

  • 1 cup peanuts
  • ⅔ cup raisins
  • ¼ cup candy coated pieces like M&Ms, I used peanut butter filled Little Secrets
  • ¼ cup chocolate chips, dark, milk or white

Directions

  1. Mix: Combine all ingredients together and enjoy.
  2. Store: Store leftover trail mix in a sealed jar or reusable storage bag, they should keep for 1-2 weeks.
