Ingredients
  1. 1 15-ounce can black beans, drained, rinsed, and chilled
  2. 1 mango, diced
  3. 1/2 red bell pepper, diced
  4. 1 scallion, sliced thinly
  5. 2 tablespoons extra-virgin olive oil
  6. 2 teaspoons red-wine vinegar
  7. 1 to 2 teaspoons minced jalapeno
  8. 1/4 teaspoon dried cilantro
  9. Salt to taste
  10. 2 tablespoons crumbled goat cheese
Instructions
  1. Mix everything but the cheese in a bowl.
  2. Allow to marinate in the refrigerator for an hour before serving for best flavor.
  3. Add cheese just before serving.
